Although maize has been cultivated for thousands of years, the first reference to sweet corn was made in 1779 in relation to a crop grown on the Indian fields of Massachusetts, USA. Sweet corn was described as a mutation of fodder maize that arose when plant breeding began in the USA in the 1830s. Sweet corn only became known in Germany in the 1970s. Sweet corn contains more sugar than fodder maize and its transformation into starch occurs more slowly. Sweet corn needs to be harvested when the grains are still milky.

Cultural tip:
Harvesting is best carried out early in the morning while the cobs are still cold. By subsequently cooling them rapidly to between 0 - 0.5°C the transformation of sugar into starch is reduced to such an extent that the sweetness is retained. At temperatures above 10°C the sugar loss occurs four times more quickly than at 0°C. Optimum air humidity in the store is 95 - 98% relative humidity. Plants should be planted at least 300m or better still 500m away from any fodder, grain or ornamental maize crops that may be growing as well as any standard sweet corn. Pollen from starch forming varieties may increase the starch content and affect the sugar content of sweet corn.
To provide a supply throughout the season the three varieties offered Damaun, Mezdi and Tramunt can be sown in succession from mid April until 10th June in five or six sowings. If only one variety is used a succession will only be achieved by making 10 sowings.
A planting density of about 5.5 plants per square meter (e.g. 75cm x 25cm) results in a good quality cob with open pollinated varieties. With larger plantings a more complete pollination is assured. A good supply of water is needed to help each plant produce cobs that are filled right to the end.
