Fennel is a well known herb and medicinal plant. Its bulbous form (Florence fennel) has only established itself as a crop in Germany in the course of the last fifty years. The area under production has more than tripled since the mid 1990s.
Fennel is very tasty when mixed with other vegetables or if it has undergone a lactic acid fermentation.

Cultural tip:
Fennel needs a consistent supply of water and this also reduces bolting or splitting.
